I know it is discontinued, but anyone has an idea how to get one?

No idea where you can find the book, but you can have a look on this website, it's full of informations: http://www.ffme.info/canyon/site.php?ID_DEPARTEMENT=101
-> choose your canyon
-> click on "topo de l'itinéraire"
-> you can even get the GPX tracks
Those topo are more recent than the book (which is from 2007), so it might be a good indication
